Since 2012, Nina Nørgaard has designed bespoke glassware for the three-star Danish restaurant Noma in Copenhagen. Her collaboration with Noma’s team of sommeliers has resulted in more than 30 unique designs, including flasks, cups, wine glasses, soap dispensers, and pitchers. For the wine glasses, Nina developed a distinctive technique that merges traditional Swedish glassblowing — where the stem is drawn directly from the bowl — with a thousand-year-old manual method in which the warm glass is gradually opened by hand. This eliminates the need for cutting the glass when cold and leaves the rim soft and organic. The result is a more natural and delicate mouthfeel, perfectly tuned to highlight the subtle nuances of the natural wines served at Noma.
